HARVEST AND VINIFICATION
Harvest is manual. The wine comes from a selection of grapes from two of the estate’s vineyards. After the stems are delicately removed, maceration takes place for 18-20 days in steel vats. 60% of the wine is transferred to French oak barriques on their second passage for a period of 18 months, while 40% goes to steel vats. The Riserva is aged in the bottle for 12 months and is not filtered in order to conserve its aromas, perfumes and structure.

ORGANOLEPTIC NOTES

Grapes

The 1427 Chianti Classico Riserva is made from Sangiovese with a small percentage of Cabernet, which gives structure and complexity. The grapes come from selected vineyards, where altitude and soil provide a balance between freshness, depth and aging capacity.

Maceration Time

The grapes macerate for 18-20 days in stainless steel vats, allowing for optimal extraction of color, tannins and aromas. This process gives the wine structure and softness, ensuring a perfect balance between intensity and finesse, with elegant and well-integrated tannins.

Winemaking and Refinement

After fermentation, 100% ages for 18 months in French oak barriques. This is followed by a further 18 months of bottle ageing, which is essential to enhance harmony and complexity, giving depth and elegance.

Organoleptic Characteristics

The color is intense ruby red with garnet reflections. The nose reveals cherries in alcohol, dried roses and sweet spices, with notes of coffee and candied orange. The sip is soft and enveloping, with silky tannins and a freshness that accompanies a long and complex finish.

Alcohol Content and Structure

With 14.5% alcohol, the wine has a solid and refined structure. The acidity perfectly balances the richness of the sip, while the Cabernet adds persistence and depth. This balance allows for excellent evolution in the bottle, maintaining elegance and character.

Service and Temperature

It should be served at 18°C, preferably after an hour of oxygenation. For younger vintages, decanting is recommended, so as to enhance the aromatic bouquet and soften the tannins. The ideal glass is a wide goblet, to favor the opening of the aromas and the full expression of the wine.

Food Pairings

Perfect with Florentine steak, braised meats and game, enhancing the succulence of the meat. Excellent with pappardelle with hare ragù and mature cheeses, such as Tuscan pecorino. The spicy and balsamic finish pairs well with structured dishes, enhancing every nuance.
