HARVEST AND VINIFICATION
Grapes are handpicked, put in little boxes and immediately softly pressed without destemming. Only the noble part of the must is
fermented at low temperature in steel. After an initial period of aging, the wine passes to the secondary fermentation in autoclave where it remains on the lees for about 4 months.
The result is a fresh sparkling wine, complex with hints of red berries and bread crust accompanied by a persistent perlage.

 

ORGANOLEPTIC NOTES
Soft rosé – pale pink with onion skin reflections – fruity nose,
fine and persistent. Harmonious taste: freshness and acidity are perfectly balanced with a low residual sugar with a fairly pleasant mineral sensation.

 

COMBINATION
Excellent as aperitif, ideal with first and second courses based on fish and white meat. Serving temperature 6-8°C.

Grapes

Goccia BRUT is a rosé wine produced from 100% Sangiovese, obtained with careful vinification to enhance freshness and aromatic finesse. Its vibrant and delicate character makes it a versatile and refined rosé, perfect both as an aperitif and for pairing with light dishes.

Maceration Time

The grapes are softly pressed, with brief contact with the skins to obtain the characteristic pale pink color with onion skin reflections. Fermentation takes place at a controlled temperature in stainless steel, preserving the fruity aromas and liveliness of the wine.

Winemaking and Refinement

Fermentation takes place exclusively in stainless steel, to preserve the aromatic purity and freshness of the Sangiovese. The wine then ages for 4 months on the lees, developing greater complexity and a balanced structure.

Organoleptic Characteristics

The color is a delicate, bright and inviting pink. The nose shows notes of small red fruits, pomegranate and wild strawberries, accompanied by floral hints of rose and white flowers. The palate is fresh and lively, with a balanced acidity and a savory finish that invites the next sip.

Alcohol Content and Structure

With an alcohol content of around 12%, Goccia BRUT is a light and refreshing wine, with a marked acidity that makes it perfect for immediate consumption. The Sangiovese gives it a subtle structure, which enriches its complexity without weighing it down.

Service and Temperature

It should be served at 8-10°C, preferably in a white or rosé wine glass, to enhance its freshness and aromatic expression. Ideal for tasting immediately after opening, without the need for decanting.

Food Pairings

Perfect for aperitifs and light dishes, it pairs magnificently with smoked salmon crostini, seafood salads and fish carpaccio. Also excellent with fried fish, vegetable tempura and fresh cheeses, thanks to its acidity that cleanses the palate and enhances the flavors.
