Grapes

The Giubileo 2025 is a blend of 70% Cabernet Sauvignon and 30% Merlot, selected from specific parcels of the estate. The Cabernet provides structure and depth, while the Merlot adds softness and envelopingness, creating a harmonious and balanced wine, designed to celebrate a unique occasion.

Maceration Time

The grapes are left to macerate for 15-20 days in stainless steel, with a controlled temperature fermentation. This process allows for the extraction of intense fruity aromas and silky tannins, preserving the freshness of the fruit and guaranteeing a wine with a fine and pleasant structure.

Winemaking and Refinement

The 2025 Giubileo ages for almost two years in stainless steel, without passages in wood, to keep the aromatic purity of the fruit intact. After bottling, it rests for 4 months in the bottle, developing further balance and complexity before being released for sale.

Organoleptic Characteristics

With an intense ruby ​​red color, the nose opens with notes of cherry, small red fruits and light herbaceous nuances typical of Cabernet. Merlot enriches the aromatic profile with hints of plum and sweet spices. On the palate it is soft and round, with a delicate tannin and a vibrant freshness that makes the sip agile and smooth.

Alcohol Content and Structure

With an alcohol content of around 13%, this wine stands out for its ease of drinking, while maintaining a good structure. The combination of acidity and medium body makes it perfect for both immediate consumption and for a moderate evolution in the bottle.

Service and Temperature

It should be served at 16-18°C, preferably in a medium-sized red wine glass, to enhance its freshness and fruity component. It can be tasted immediately after opening, without the need for decanting, to fully appreciate its lively and refined character.

Food Pairings

Versatile and harmonious, Giubileo 2025 pairs perfectly with traditional Roman dishes, such as carbonara and cacio e pepe, but also with white meats, poultry and medium-aged cheeses. Its freshness also makes it ideal with tasty vegetarian dishes, ensuring a balanced and satisfying experience.
