Grapes

Manuzio is a pure Merlot, selected from the most suitable plots of the estate. The grapes come from vineyards with excellent sun exposure, which allow for perfect ripening, enhancing the complexity and depth of this wine, among the most prestigious of Panzanello.

Maceration Time

Maceration lasts for 25-30 days in stainless steel vats at a controlled temperature, favoring a complete extraction of color, tannins and aromas. The long contact with the skins allows to obtain a rich and velvety structure, with an intense aromatic profile and an enveloping finish.

Winemaking and Refinement

After fermentation, the wine ages for 24 months in new French oak barriques, developing complexity and elegance. The ageing continues for at least 24 months in the bottle, allowing the Manuzio to express all its power and finesse, maintaining balance and harmony.

Organoleptic Characteristics

The color is deep ruby red with purple reflections. On the nose, notes of blackberry, ripe plum and sweet spices emerge, accompanied by nuances of chocolate, tobacco and vanilla. In the mouth it is enveloping and powerful, with silky tannins, great structure and a long finish with balsamic hints.

Alcohol Content and Structure

At around 14.5% alcohol, Manuzio is a full-bodied wine, powerful but perfectly balanced. The acidity keeps it fresh and vibrant, while the passage in wood gives it depth, softness and an extraordinary capacity for aging.

Service and Temperature

It should be served at 18°C, preferably after at least two hours of oxygenation. A large structured wine glass allows you to enhance its aromatic complexity and evolution in the glass, enhancing every nuance and making the sip more harmonious.

Food Pairings

Perfect with game, red meats and mature cheeses, it pairs magnificently with Florentine steak, braised meat and beef fillet with truffles. Also excellent with mature Tuscan pecorino and porcini mushroom dishes, thanks to its structure and intensity.
